Our Prayer

Dear Heavenly Father, hear our prayer:

Please weave the women of St. Raphael into a beautiful tapestry of faith and friendship. Let us be woven by your Holy Spirit with our eyes and hearts set upon Christ our Savior. Help us shine with the light of Christ and draw souls to Jesus. We ask this in the name of Jesus, through the intercession of the Blessed Virgin Mary. Amen.

First Friday Coffee - Chia Drink Recipe

Posted by Alina

This November's  First Friday Coffee in the Courtyard in honor of the Sacred Heart of Jesus was a great hit! It is very encouraging to see how the group of ladies & men coming to mingle for coffee after Mass each month is growing :) The enthusiasm is pretty contagious.

I was also very amazed at how open everyone was to try my strange looking, black-speckled, jelly-textured Limeade drink that I brought...October AND November. How good to know everyone is very open minded to try new things!

I brought it thinking that it'd give everyone an opportunity to try Chia Seeds, which have been a recent rave amongst runners. I am not a "runner", but I do like to run, as of last year. The seeds were mentioned in the book Born to Run.

Someone also mentioned another Chia Pudding w/ Coconut Milk, Agave, Vanilla, and Chia Seeds. I need to try making this. It sounds really good. It may be something to bring for December!

I mentioned I'd post the recipe, so here is my version of it:

Chia Seed Limeade Drink
1/4 c. Chia Seeds
8-9 c. Water
1/4 c. Lime Juice
1/4 c. Sugar or Blue Agave (a natural sweetener from the Agave cactus plant, w/ a lower glycemic index)

Let the seeds sit in the water for about a half hour (but it can sit for days in the fridge too). This allows the little jelly-ness burst out of the seeds.

Chia Seeds can be found at Whole Foods or MOM's (My Organic Market). MOM's is on Parklawn Dr. behind White Flint Mall.
