Our Prayer

Dear Heavenly Father, hear our prayer:

Please weave the women of St. Raphael into a beautiful tapestry of faith and friendship. Let us be woven by your Holy Spirit with our eyes and hearts set upon Christ our Savior. Help us shine with the light of Christ and draw souls to Jesus. We ask this in the name of Jesus, through the intercession of the Blessed Virgin Mary. Amen.

A simple meal - things in the pantry

The meal suggested for tonight in the 2012 CRS Lenten Rice Bowl Calendar is Vietnamese Vegetable Spring Rolls, this dish has 8 ingredients which we did't readily have in the house, and would have to go to a specialty store to procure.  Therefore, we created our own meal tonight.

Tonight we had an onion cooked in oil, cooked with kale, chick peas and some Tamarind and Garlic sauce (which I bought on clearance) that has been sitting around our pantry for a month, and rice.  Instead of celebrating Vietnam with our meal, we celebrated India instead. 

 I cooked all of these things together in one pot, and also made a pot of rice.  The result was fast, easy, and delicious. 


The story in the calendar focuses on a young man named Giap who, due to a high fever and illness, lost his ability to walk, and is bound to a wheel chair.  In Hanoi, Vietnam, CRS has created a school that supports people with disabilities - those on crutches, in wheelchairs, and the blind.  They learn office skills on the computer and Giap is learning how to design websites.  CRS has enabled him and his classmates to gain confidence in their own abilities, and has given them the ability to work and earn a living.  This is one of the basic tenants of Catholic Social Teaching, that all people have inherent dignity; and it is our duty to protect the life and welfare of all people.   

One of the main focuses of Lent should be the poor.  Fasting and abstinence are only good in so much as they remind us of those who do without, and that we set aside the money saved via fasting and abstaining from meats and give that money to the poor.  Fasting, abstinence, and alms giving are ways that we are able to serve the poor, and unite ourselves to them. 

A simple meal during lent reminds me that the poor don't eat "simply" because it is Friday, or because it is Lent. The poor eat "simply" because they are eating what they have, and they are simply eating.

Did my kids eat the meal this week? No. It was too complex for my children who also like simple meals.  Instead, they had rice, cheese and pickles.  Yum?
